Perfect Oatmeal Chocolate Chip COOKIES

Ingredients:

1 cup butter

1 cup white sugar

1 cup packed brown sugar

2 eggs

1 tsp vanilla

2 cups flour

1 tsp baking soda

1 tsp baking powder

1 tsp salt

2 tsp ground cinnamon

3 cups old fashioned oats

2 cups dark chocolate chips

Directions:

Combine flour, baking powder, baking soda, salt, and cinnamon in a small bowl. Mix until well combined.

In a separate bowl, cream together butter and sugars. When fully combined, beat in eggs one at a time. Add vanilla, mix.

Add flour mixture to your creamed mixture. Stir until fully combined

Add 3 cups old fashioned oats and 2 cups dark chocolate chips, mix until well combined. Refrigerate 30 min

Roll dough into 2 inch balls

Bake in a 375°F oven 14 min or until golden brown

Simple Chicken Fried Rice

This recipe is a long time favorite! Quick and simple – perfect for those busy weekdays!

Ingredients:

3 cups white rice

6 cups chicken broth

4lb de-boned chicken (cooked)

2 cups diced carrots

1 whole medium sized onion – diced

2 Tbsp butter

4 eggs

1/3 cup soy sauce

Directions:

In a large deep skillet, over med/high heat – Melt 2 Tbsp butter – Add carrots and onions – cook until soft

Add 3 cups white rice – cook until slightly browned

Add 6 cups chicken broth – bring to a boil – cover and reduce heat to low. Simmer until liquid is fully dissolved

Stir in the cooked chicken then, crack 4 eggs and stir until fully cooked

Lastly, stir in 1/3 cup soy sauce and serve.

TIP: Cook a whole chicken in an Instant pot – Place a 4 lb chicken in a 6 quart Instant Pot. Fill the pot to the half way water mark. Combine 1 Tbsp smoked paprika, 1 Tbsp garlic powder,1 Tbsp onion powder, 2 tsp salt, and 1 tsp pepper. Sprinkle over the chicken. Add 3 bay leaves. Pressure cook for 1 hour. Quick release. The chicken will be falling from the bones! Use the chicken and the broth for your rice. Makes a flavorful and delicious fried rice!

Brewing Kombucha

Batch Brew Method

What is the batch brew method? Batch brewing is making small batches of kombucha at one time. This method is best for people who don’t drink kombucha on a daily basis.

YOU WILL NEED:

1/2 gallon glass jar

6 cups water

6 black tea bags

3/4 cup sugar

2 cups pre-brewed kombucha

scoby

Coffee filter

band to hold filter in place

Directions :

  1. Brew the tea – In a small saucepan add 6 cups of water and 6 tea bags. Bring the water to a boil, turn heat down and simmer for a couple minutes. Remove heat and remove tea bags.
  2. While the tea is hot, add 3/4 cup sugar and stir to dissolve. Let tea cool to room temp.
  3. In your 1/2 gallon glass jar, pour the 2 cups of pre-made kombucha. Next you will pour your cooled tea into the glass jar (must be cooled, if too hot the heat will kill the bacteria in your pre-made tea).
  4. Add your scoby to the glass jar – The scoby might sink and that is normal. Cover with the coffee filter and secure the filter with a band.
  5. Allow to sit at room temperature for 7-10 days. At this point your kombucha is ready for consumption. Remove your scoby and refrigerate.

Your kombucha may have formed a new scoby, simply store scobys in a container of kombucha in the refrigerator.

Quick weeknight dinner the whole family will LOVE!

INGREDIENTS:

5 – 5 1/2 cups flour

1 packet yeast (2 1/4 tsp)

2 Tbsp sugar

1 cup milk

1/2 cup water

4 Tbsp butter

pizza toppings

Directions:

Prepare toppings of choice (cut cheese into cubes, cook sausage, cut pepperoni in small pieces, etc) and set aside.

In a mixing bowl add 3 cups flour, 1 packet yeast, and 2 Tbsp sugar. Stir to combine

Heat 1 cup milk, 1/2 cup water, and 4 Tbsp butter to 110°F. Pour the heated milk mixture into the flour mixture. Stir until combined.

Add the egg and stir until smooth

Add 1 cup of flour at a time until the dough comes together use your hands if you need too

Turn out dough onto a lightly floured surface, knead it until it becomes smooth and not sticky (add more flour if needed)

Next you will divide the dough into 12 semi-equal pieces and roll them into balls

Filling the Dough:

Place one dough roll into your hand, indent the dough slightly, lay a cube of cheese, toppings, and another cube of cheese in the indent. Fold the ends of the dough over the toppings and pinch closed

Fill each dough roll with toppings, set on a baking pan, cover, and allow to rise for 30 min

When the 30 min is up, bake the rolls in a 400°F oven for 10-12 min or until golden brown

Growing a Kombucha SCOBY

I know what your thinking…..”What is a kombucha SCOBY and why would I want to grow one!?!” First off, kombucha is a fermented tea that is full of gut loving bacteria and in order to get those gut loving bacteria into your tea you need to ferment it. A SCOBY (symbiotic culture of bacteria and yeast) acts as a starter for the ferment. Basically, a SCOBY is a blob of bacteria and yeast that floats inside of the tea and converts it to the sour tasting kombucha we all love! The yeast in the SCOBY feeds off of the sugar which turns it into ethanol. The bacteria in the SCOBY feeds on the ethanol which turns the tea acidic and makes it sour tasting. To grow your own SCOBY takes patience; the entire process can take 3-4 weeks but the end result is a fully formed SCOBY that you can use over and over again to brew your own kombucha! To grow your own SCOBY you’re going to need:

1/2 gallon mason jar with band

6 black tea bags

6 cups water

3/4 cup white sugar

2 cups pre-made unflavored kombucha

coffee filter

Step 1 : Brew the tea – In a medium saucepan combine 6 cups of water with 6 tea bags. Once the tea comes to a boil, remove from heat and take out the tea bags. Stir the 3/4 cup sugar into the tea until fully dissolved. Allow the tea to cool to room temperature.

Step 2: Once the tea is fully cooled, pour into a 1/2 gallon mason jar. Pour your pre-made kombucha (can be store bought – original flavored) into the tea. Cover with a coffee filter to allow the tea to breathe without becoming contaminated with airborne particles. Place a ring or some sort of band around the coffee filter to hold it in place.

Step 3: Place jar in a warm place – a SCOBY will grow best when temps are between 72°F and 80°F – Your going to leave the jar in the warm location for 3-4 weeks.

Check on your tea once a week to be sure a SCOBY is beginning to form. Your tea should begin to smell acidic and vinegar like.

When the SCOBY is about an inch thick it is ready to use. Pour 2 cups of your starter liquid into a separate container and save for your next batch of kombucha. To store your SCOBY place in a glass container and pour the remainder of the starter tea over the SCOBY. Cover and store in the refrigerator until ready to use.

Keeping Chickens in Winter w/Deep Bedding

Imagine…It’s 15°F out, the wind is ice cold and your getting all bundled up to spend the next hour cleaning out the smelly chicken coop….sounds appealing right? If that doesn’t sound like a fun time to you, don’t worry, there’s a better way….

The Deep Bedding Method:

What is the deep bedding method? The deep bedding method is a simple process of laying down fresh carbon bedding (pine shavings, wood chips, leaves, grass clippings, etc.) once the previous layer has become soiled by your chickens.

Why Use the Deep Bedding Method?:

  • Cuts down on coop cleaning and eliminates the stink! We keep our chickens in their coop area all winter without cleaning the coop once. If the coop starts to smell then you need more carbon bedding. The coop should always smell earthy never “stinky.”
  • Provides compost for the gardens! Chicken poop is rich in nitrogen which falls into the carbon rich bedding; the chickens then scratch and peck naturally turning the nitrogen/carbon mixture causing it to slowly break down into a nourishing compost for your soil.
  • Provides warmth to the coop! When the nitrogen and carbon begin to break down they put off heat which naturally keeps the coop warmer.

How To Start Using the Deep Bedding Method:

Start with 4″-5″ Carbon Bedding
  • Start by laying down 4″ – 5″ of carbon rich bedding (woods chips or pine shaving work great!).
  • Let the chickens do their thing! The chickens will drop their waste and then scratch and peck which will incorporate the waste into the carbon material.
  • Once the initial layer of bedding becomes soiled or starts to smell “stinky” add more carbon bedding.
  • At the end of the winter pull your new compost out of the coop and use where needed. You can leave 4″- 5″ of composted bedding in the coop to jumpstart the next batch.
  • Enjoy the winter, without cleaning a “stinky” coop!

Cinnamon Rolls w/ Cream Cheese Frosting

These cinnamon rolls are the perfect combination of gooey deliciousness! What are you waiting for!?! Let’s get started…

INGREDIENTS

Dough:

4-5 Cups Flour

2 Tablespoons Yeast

1/3 Cup Sugar

1 Teaspoon Salt

1 1/2 Cups Warm Milk (110°F)

1/2 Stick Melted Butter

1 Egg

Filling:

1 Cup Brown Sugar

3 Tablespoons Ground Cinnamon

1 Cup Softened Butter (2 Sticks)

Frosting:

8 Oz Cream Cheese – Room Temp

8 Tbsp (1 Stick) Butter

1 1/2 Cups Powdered Sugar

3 Tbsp Milk

2 tsp Vanilla Extract

DIRECTIONS

In the bowl of a mixer, combine 3 cups flour, 2 Tbsp yeast, 1/3 cup sugar, and 1 tsp salt.

Combine milk and butter in a separate container – Heat to 110°F

With the mixer’s whisk attachment and the mixer on a slow speed – pour the heated milk and butter into the flour mixture. Once well combined add 1 egg. Continue Mixing until smooth. Remove whisk attachment and replace with a dough hook

Add remaining flour 1 cup at a time until a soft dough forms. Dough is ready when it is soft and pulls away from the sides of the mixing bowl. Cover and let rise in a warm location for 30 min (dough should be doubled in size)

Punch down dough – lay out onto a lightly floured surface and roll into a rectangle. With your fingers spread the butter (must be room temp) evenly over the dough. Sprinkle 3 Tbsp ground cinnamon and 1 cup brown sugar evenly over the dough.

Roll up the dough and cut into 1.5″ – 2″ pieces

Place rolls into a shallow baking dish. Cover and allow to rise for 30 min.

In a 350°F oven, bake approx. 25 min or until light brown. Remove from oven and allow to cool slightly.

FROSTING :

In a mixing bowl combine 8 oz cream cheese with 8 Tbsp butter (1 stick), 2 tsp vanilla extract, and 3 Tbsp milk – beat until smooth. Add powdered sugar ½ cup at a time and beat until smooth and creamy. Frost cinnamon rolls while still warm.
